WHY ARE THEY SO VALUABLE?
The best anchovies of the Cantabrian are caught in the stretch of the Atlantic Ocean north of Spain between the cold currents of the north, in the period April-May, months in which the rate of fat is optimal for this production. Each fish is filleted and worked by hand and only the most beautiful and regular fillets will be selected to become a Revilla anchovy.
