Sia per la tonalità chiara che per la testura vellutata si colloca ad un livello intermedio tra il Tonno Alalunga e il Tonno di Tonnara. Pescato in mare aperto e accuratamente selezionato, viene lavorato in modo tradizionale a mano al fine di garantire la massima pulizia e interezza del pesce.
