wht did we choose redfish?

After being used for decades exclusively for fish soups, French haute cuisine has managed in recent years to enhance its meats with the use of low temperature cooking. Even the Japanese are the main buyers of the shares of fish from the Mediterranean for raw use.

Scorfano cotto a bassa temperatura

Ricetta express: cottura in busta pronto in 6 minuti, zero odori, cottura sana

-Assicurari che il prodotto sia ben scongelato ( 8 h in frigorifero o 10 minuti in acqua tiepida)

-Scalda l’acqua a 90°C (calda e stabile, non serve bollore forte).

-Immergi la busta con il pesce

-Cuoci 6 minuti (mantieni la fiamma al minimo, non deve bollire, ma solo scaldare)

-Raffredda in acqua corrente 2 minuti

-Apri, elimina eventuale liquido, impiatta: cottura uniforme, carne succosa.

-Condimento: olio extravergine d’oliva, sale Maldon, succco di limone

In padella con pomodorini e olive (9 min)

Come fare: padella calda, un cucchiaino d’olio. Salta 8 pomodorini daterino 3 minuti, aggiungi olive e capperi. Inserisci il filetto, aggiungi 3 cuchiai di acqua, metti il coperchio e cuoci 5 minuti.
Per mantenere le proprietà nutrizionali: usa cottura breve e fuoco medio: così preservi succosità e qualità delle proteine, evitando di “seccare” il pesce.

Pasta – Linguine Mancini con scorfano, limone e prezzemolo (8–10 min)

Come fare: cuoci le Linguine Mancini in acqua salata. In padella scalda poco olio, aggiungi pomodorini e capperi e cuoci per 3 minuti, rosola il filetto a fuoco medio 2–3 min per lato, poi sfalda. Scola le linguine al dente, manteca in padella con scorza di limone, prezzemolo e un mestolino d’acqua di cottura.
