Discover a new and exclusive family of oyster farmers, the heirs of the founder Monsieur Chiron, the sixth generation of passionate professionals who, thanks to their dedication, create real jewels of the sea every day in Marennes Oleron. A real rarity among the companies we have selected: unlike the other maison, Chironfils owns some of the "cru" clay salt pans for aging, farthest from the ocean, connected to it by the Seudre sea-river which allows arrival of the sea in the hinterland. This allows them to refine the oysters in fresh water, ensuring a unique balance of its kind!
A pioneer in oyster farming in the open sea (pleine mer), the Chironfils company operates an offshore field of suspended pockets off the island of Ré and the island of Oléron. These are special installations consisting of buoys and ropes that hold sacks of oysters suspended in cages permanently submerged 1 meter below sea level. This unique know-how, patiently developed since 2002, allows us to offer meaty oysters because they are fed continuously and of high quality with a strong and iodized taste, truly exceptional.
Discover this new oyster, with the caliber loved by all, the caliber 4 called Papillon. A small treasure chest that hides a full and fleshy oyster, perfect for aperitifs with friends, also adored by those who do not appreciate oysters.
