Glasswort or sea asparagus is a spontaneous herbaceous plant of the Chenopodiacee family, generally found in swamps, ponds and saline soils.
Rich in mineral salts, liquids and vitamins, glasswort comes in the form of a bush, like an agglomeration of cylindrical branches very similar to wild asparagus. The root base is fibrous and woody while at the apex it is more tender, fleshy and tasty, with buds and juicy parts.
