Anchovy sauce
From Sicily
Sauce obtained from a traditional process of ripening anchovies in water and salt. Use: especially as a sauce for spaghetti, but also to flavor fish dishes or sautéed vegetables with oil, garlic and chilli such as chard, spinach, etc. Also appreciated as a topping for tomatoes, olives, stuffed sandwiches and eggs cooked in various ways.
