Dal filetto del migliore Salmone Argentato (Coho) selvaggio pescato lungo le coste dell'Alaska viene eliminato il ventre, il collo e la coda; rimane solo la parte centrale del pesce, ossia la carne più morbida e deliziosa al palato, ciò che noi definiamo il "fioretto".

Ottimo per compattezza, sapore e colore rosso intenso. È il salmone con minore contenuto di grassi e di piccole dimensioni. Premiato dagli esperti del "Gambero Rosso" come il miglior salmone selvaggio affumicato disponibile sul mercato italiano. (classifica di novembre 2019) ed oggi entrato nella TOP ITALIAN FOOD 2022 sempre de il Gambero Rosso.

Con il nostro Fioretto di Salmone Argentato abbiamo deciso anche di accentuare la delicatezza e dolcezza del gusto scegliendo una lavorazione leggera, con poco sale e una lievissima affumicatura mediante utilizzo di legno naturale di faggio proveniente dal nord Europa.
