why did we choose it?

Tuna are fishing following a protocol learned in Japan and improved in Spain that provides the best possibile quality than can be obtain from a bluefin tuna. The JC Mackintosh Techinque is the first one in Europe performing this protocol.

how to cook it?

For cooked consumption, cut into slices. Marinated in oil and teryaki sauce 30 minutes before cooking, keeping it at room temperature. Cook it over high heat on a hot plate or grill for about 3 minutes per side. Enjoy!
