Provençal fish soup
The original of bistros!
The name derives from the Occitan olhir (to boil) and abaissar (to simmer), these two elements applied to fresh fish and ripe tomatoes from the Mediterranean basin, create one of the most popular French fish soups. Excellent used as a small entré for four people, or as a hearty soup for two.
HOW TO PREPARE IT?
Heat it for a few minutes in a saucepan or in the microwave. Being a soup with a thick consistency and intense flavor, you can dilute it as you like with broth, or enjoy it natural.
HOW TO TASTE IT?
Pair it with toasted bread on which to spread the typical rouille sauce we have selected.
