The blue cheese par excellence
Roquefort is one of the most famous and ancient French cheeses produced with goat's milk in the Mediterranean region of Occitania.
 
WHY DID WE CHOOSE IT?

Production is concentrated in the period from February to July and is ready from September. Sheep's milk cheese with a blue paste and 50% fat content. The characteristic blue-green veins are due to the development of Penicillium roqueforti, a mold which, in artisanal productions, is manually sprinkled on top of the freshly drained curd. The characteristic of a good Roquefort is to have the right balance of flavor that is created during aging. Excessive flavor is characteristic of a type of pasta that is too dry, a phenomenon that occurs in the case of mechanical processing and poor quality milk.
 
HOW TO TASTE IT BEST?

Remove it from the refrigerator at least 30 minutes before consumption and enjoy it at room temperature to fully enjoy the taste and creaminess. Pair it with raisins such as the famous Sauternes.
